Lemon Herb Chicken with Quinoa and Veggies
Ingredients:
For the Chicken:
2 boneless, skinless chicken breasts
2 tablespoons olive oil
1 lemon (juice and zest)
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
For the Quinoa:
1 cup quinoa
2 cups low-sodium chicken broth or water
1 tablespoon olive oil
1 clove garlic, minced
Salt to taste
For the Veggies:
1 cup cherry tomatoes, halved
1 cup broccoli florets
1 red bell pepper, sliced
1 tablespoon olive oil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
1. Marinate the Chicken:
In a small bowl, mix olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
Place chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken. Marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours.
2. Cook the Quinoa:
Rinse quinoa under cold water.
In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
Add quinoa and chicken broth (or water) to the saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is cooked and liquid is absorbed. Fluff with a fork and season with salt to taste.
3. Cook the Chicken:
Preheat a grill or skillet over medium-high heat.
Remove chicken from the marinade and discard the marinade.
Grill or cook chicken breasts for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
Let the chicken rest for a few minutes before slicing.
4. Roast the Veggies:
Preheat oven to 400°F (200°C).
On a baking sheet, toss cherry tomatoes, broccoli florets, and red bell pepper slices with olive oil, salt, and pepper.
Roast in the oven for about 15-20 minutes, or until vegetables are tender and slightly charred.
5. Assemble the Dish:
On a plate, place a serving of quinoa.
Top with sliced grilled chicken.
Add a portion of the roasted veggies.
Garnish with freshly chopped parsley.
