Nutty Quinoa Salad

Nutty Quinoa Salad

Ingredients:

For the Salad:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1/2 cup toasted walnuts, chopped
  • 1/2 cup toasted almonds, chopped
  • 1/2 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 1/4 cup crumbled feta cheese (optional)
  • Salt and pepper to taste

For the Dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Cook the quinoa: In a medium saucepan, bring the water or vegetable broth to a boil. Add the rinsed quinoa and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it cool slightly.
  2. Prepare the dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey or maple syrup, Dijon mustard, salt, and pepper until well combined. Set aside.
  3. Toast the nuts: In a dry skillet over medium heat, toast the walnuts and almonds, stirring frequently, until they are fragrant and lightly browned, about 3-5 minutes. Be careful not to burn them. Remove from heat and let them cool.
  4. Assemble the salad: In a large mixing bowl, combine the cooked quinoa, toasted walnuts, toasted almonds, dried cranberries, chopped parsley, chopped green onions, and crumbled feta cheese (if using). Toss gently to combine.
  5. Add the dressing: Pour the prepared dressing over the quinoa salad and toss until everything is evenly coated.
  6. Adjust seasoning: Taste the salad and adjust the seasoning with salt and pepper as needed.
  7. Serve: Transfer the nutty quinoa salad to a serving dish or individual plates. Garnish with additional chopped parsley or nuts if desired. Serve warm or at room temperature.
  8. Enjoy: This nutty quinoa salad makes a delicious and nutritious meal on its own or as a side dish. Enjoy the combination of flavors and textures!
