Salmon with Almond Crust and Roasted Vegetables
Ingredients:
For the salmon:
- 4 salmon fillets
- 1/2 cup almonds, finely chopped
- 2 tablespoons whole wheat breadcrumbs (optional)
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- 1 tablespoon olive oil
- Salt and pepper to taste
For the roasted vegetables:
- 2 cups mixed vegetables (such as carrots, broccoli, cauliflower, bell peppers), chopped into bite-sized pieces
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- Preheat the oven: Preheat your oven to 400°F (200°C).
- Prepare the almond crust: In a shallow bowl, combine the finely chopped almonds with breadcrumbs if using. In another bowl, mix Dijon mustard, honey or maple syrup, and olive oil. Season with salt and pepper. Brush each salmon fillet with the mustard mixture, then press the almond mixture onto the top of each fillet to form a crust.
- Roast the vegetables: In a large mixing bowl, toss the mixed vegetables with olive oil, minced garlic, dried thyme, salt, and pepper until evenly coated. Spread the vegetables out on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes or until tender and lightly browned, stirring halfway through cooking.
- Bake the salmon: While the vegetables are roasting, place the prepared salmon fillets on another baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until the salmon is cooked through and the almond crust is golden brown.
