Recipe: Maple Glazed Pecan-Crusted Chicken

Ingredients:


For the Pecan Crust:

  • 1 cup pecans, finely chopped
  • 1/4 cup breadcrumbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the Maple Glaze:

  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon soy sauce or tamari
  • 1/2 teaspoon ground cinnamon

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Prepare the pecan crust: In a shallow bowl, combine the finely chopped pecans, breadcrumbs, smoked paprika, garlic powder, salt, and pepper. Mix well and set aside.
  3. Make the maple glaze: In another bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, soy sauce or tamari, and ground cinnamon until smooth. Set aside.
  4. Prepare the chicken: Season the chicken breasts with salt and pepper on both sides.
  5. Coat the chicken: Brush each chicken breast with the maple glaze, coating it evenly on all sides.
  6. Apply the pecan crust: Press each glazed chicken breast into the pecan crust mixture, coating it thoroughly. Make sure the pecan mixture sticks to the chicken.
  7. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the coated chicken breasts to the skillet and cook for 2-3 minutes on each side, or until golden brown.
  8. Transfer to baking sheet: Transfer the seared chicken breasts to the prepared baking sheet.
  9. Bake in the oven: Place the baking sheet in the preheated oven and bake the chicken for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  10. Serve: Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving. Serve the maple glazed pecan-crusted chicken hot, accompanied by your favorite side dishes.
